Beetroot is a vegetable that will give you exciting flavours and colours on your plate. You can make healthy beetroot snacks that are tasty and still get all the nutrients in this vegetable.

As a chef, I like making snacks during the weekend when everyone is at home. Instead of buying snacks that are full of sugar, salt, and fat, I make healthy snacks with veggies like yams, sweet potatoes, and even beetroot that are yummy. Beetroot gives my food colour, flavour, and nutritional benefits that I can’t get in most foods alone. It’s easy to prepare and it has simple recipes that I can make for my family to enjoy and the best part it’s a very healthy veggie. I  can make healthy snacks for my kids and guests in just a few minutes. I’m still looking for more snack recipes because my kids are now hooked to beetroot snacks.

Healthy beetroot snacks

Chili roasted beetroot chips

Ingredients

  • 1 thinly sliced beetroot
  • 2 tsp. melted olive or coconut oil
  • 1 tsp. minced garlic
  • 1 tbsp. nutritional yeast
  • ½ tsp. chili powder

Method

Preheat your oven to 375 F or 190o C.

Wash the beetroot well then thinly slice it.

On a baking pan, put the beetroot slices and olive oil then add all the other ingredients make sure the slices are evenly coated.

Bake them for 20 minutes.

Keep flipping them until they’re crispy.

Baked rosemary beetroot chips

Ingredients

  • 3 medium-large scrubbed and rinsed beetroots
  • 2-3 roughly chopped sprigs rosemary
  • Avocado or olive oil
  • Salt and black pepper to taste

Method

Preheat oven to 375 degrees and place the oven rack in the middle of the oven.

Use a sharp knife to thinly slice the beetroots so that they slightly curl when you cut them to ensure they bake evenly and are crispy.

Drizzle some olive oil on two baking sheets.

Add the rosemary, pepper, and some salt then toss the beetroots to make sure they coat evenly.

Arrange the slices in a single layer making sure they don’t touch each other.

Bake for 15-20 minutes or until they’re slightly brown or crispy. Keep checking on them because they can easily burn.

Remove the slices from the oven and let them cool then serve with ketchup.

Beetroot rolls

Ingredients

  • ½ grated beetroot
  • 1 chopped spring onion
  • 2 boiled potatoes
  • 2-3 slices of bread
  • 1 tsp. oil
  • ½ grated carrot
  • 1 chopped onion
  • 1 tsp. mustard seeds
  • 2 tbsp. semolina
  • 1 tsp. garam masala
  • Salt to taste
  • 1 tsp. cumin seeds
  • 1 tsp. chaat masala
  • Oil for frying
  • 1 tsp. lemon juice

Method

In a pan, put oil then add mustard seeds and cumin seeds.

Add the spring onion and onion and saute then remove from the heat and allow to cool.

In a big bowl, mix the beetroots, potatoes, and carrots. Season it then add the onion mixture.

Slightly wet the bread slices with some water then add them to the mixture.

Form patties with your desired shape.

Cover them in semolina and make sure they’re well covered.

Deep fry the patties till brown. Serve with ketchup or any dip of your choice.

Carrot, bottle gourd, and beetroot halwa

Ingredients

¾ cup grated beetroot

¾ cup grated carrot

1 tbsp. ghee

¼ cup milk

¾ cup grated bottle gourd

½ cup of sugar

¼ tsp. cardamom powder

½ cup crumbled mawa

1 tsp. finely chopped almonds

Method

In a microwave safe bowl, put the ghee and microwave for 1 minute.

Add beetroot, carrot, milk, bottle gourd, sugar, and mawa and mix well. Microwave for 12 minutes stirring every 2 minutes.

Add cardamom powder then mix well.

Garnish with chopped almonds.
